As we harvest those fresh greens, tomatoes, sprouts, cucumbers and more----some outstanding and dressings---and quick dishes to keep you out of a hot kitchen..........

First up, is Carolyn's Cucumber Dressing---this is one of those dressings that is so tasty you will want to drench your salad in it.  Add thin slices of grilled cold chicken and a crust toasted Italian bread for an easy satisfying meal.

It's followed by a Dijon Mustard vinaigrette recipe that's just wonderful on fresh spinach or baby greens and super thinly sliced red onion rings.

Also fabulous on cold grilled chicken, thinly sliced.

Next up a fabulous economical but exceedingly high on taste recipe from Goya --Delicious Orzo and Bean Salad with Charred Radicchio and Olives---and spicy Balsamic Dressing...also paired with grilled chicken even better.....

This delicious bean and pasta salad can be served as a delicious lunch or as a side dish for dinner.  The recipe is here.
