SOME ROGUE BASIL PLANTS THAT DECIDED TO POP UP UNDERNEATH THE ROSES have provided your editor (and the neighbors) with quite a bit of excellent fresh basil this summer season.....Check out these recipes:

YES WE LOVE EGGPLANT.  In tough times, it can feed an army and your editor's EGGPLANT PARMESAN has done just that.....(recipe will appear next time)....throw in a simple salad and some crusty bread---and everyone goes home happy......

Of all the vegetable recipes I post, eggplant recipes are the most divisive. Early on, this surprised me, because eggplant recipes have always been some of my favorite foods to eat. As a kid, I never wanted to stop playing at dinnertime, except when my mom was making eggplant Parmesan. And when I started to explore vegetarian cooking on my own, grilled eggplant was one of the first dishes I mastered. MUCH MORE FROM LOVE & LEMONS HERE.

  1. Sundays were for baked eggplant, salad, chicken and for dessert, chocolate pudding pie. This was our special meal of the week because chicken and beef were expensive.I have tried many time to replicate my mother's salad dressing and eggplant dish without success so this is just a gentle remind to record those family recipes if you can, while you can. It's part of your family's history!
