ALL THINGS COOKERY, KITCHEN AND TABLE - #3

Welcome to Everything Croton, a collection of all things Croton--our history, our homes, our issues, our businesses, our schools, our houses of worship--in short, EVERYTHING CROTON.

Announcing ALL THINGS COOKERY, KITCHEN & TABLE #3...a new series here at the blog for all you cooking enthusiasts out there---recipes, tips, local shopping, interesting links....we'll keep it light and fun...click on the photos and links.

This posting is all about keeping those meal costs down--and stretching food.........

First up, stretching chicken!  The old fashioned way---with CHICKEN A'LA KING; this is almost exactly how our family made it---but REGULAR MILK was substituted for the heavy cream....served over rice with the addition of a simple spring greens salad.  Add twenty percent more peas and mushrooms and this will satisfy even the hungriest crew. This recipe comes from the STAY AT HOME CHEF.

ANOTHER GREAT WAY TO STRETCH CHICKEN---"FORGOTTEN CHICKEN CASSEROLE"; we used four chicken breasts for this recipe (instead of six)--cut them into halves--and added an additional 1/4 cup of rice; no on felt deprived https://www.allfreecasserolerecipes.com/Chicken-Casseroles-Recipes/Forgotten-Chicken

It was true back in the 70's and it's true now--"Sloppy Joes" a.k.a. Manwiches---is one of the best ways to stretch chopped meat.

HERE'S A FAB RECIPE FOR SLOPPY JOE SLIDERS FROM TASTY.

And one from CULINARY HILL here.

AND STEP BACK IN TIME---SOME SCANS FROM A VINTAGE MANWICH RECIPE BOOK---and yes, the Elves have tried some of these with great success!  Click here.

Another fab salad--that's very filling, healthy and stretchable by adding whatever left over cheese and additional vegetables you may have, is this tasty LENTIL SALAD from FOUNTAIN AVENUE KITCHEN; CLICK HERE

Pair it with some good crusty bread---toasted---(and a glass of white wine)!

STRETCHING LEFT OVER BACON---got some left over bacon?  Here's the perfect casserole---tried and true--BACON RANCH POTATOES

Pair it with a simple salad---it's perfect comfort food https://bakeatmidnite.com/bacon-ranch-potatoes/

  1. This post inspired me to make sloppy joe's last night for our board game hour. Thank you! It made a pound of chop meat go a little extra-ways.
