CHICKENS! PAST AND PRESENT

Every now and then, a former neighbor used to pick up fresh eggs for the rest of us from a local "keeper of hens" (and the former neighbor made a great Irish soda Bread too, but I digress).

Many of us LOVED using these eggs in baking certain recipes---the super-freshness of the product was a game-changer. For some things, the added price-point was nominal all things considered and worth it.

And we have to be honest: we love coming across a home with a well-kept henhouse, the local bird-flu hysteria notwithstanding (see a true beauty here). There's a nostalgic charm that defies description--a happy middle ground between the rural and the urban.
